Granola Bars by Fran Murray

THESE GRANOLA BARS ARE EVERYTHING....jammed packed with whatever your heart's desire. I love that you can make them your own. 



2 ½ cups rolled oats 

½ cup nuts

1/3 cup brown sugar

¼ cup butter

¼ cup honey

1 tsp vanilla extract

¼ tsp salt

¾ cups chunkiness (1/4 cup each of three other ingredients such as dried fruit, coconut flakes, chocolate chips/chunks etc…)


What to do:

  1. Preheat oven to 350 degrees
  2. Cover either an 8”/9”/10” square pan and grease with cooking spray or butter. A 9” pan is the sweet spot but don’t panic if you don’t have it. Use what you have. 
  3. Place oats on baking sheet and toast for no more than 10 minutes
  4. Combine brown sugar, butter and honey in a small saucepan and heat on medium heat until sugar melts (about 3 minutes). Stir occasionally. 
  5. In a large bowl, combine toasted oats and nuts
  6. Add sugar mixture to bowl with oat mixture and stir with a greased spatula or wooden spoon
  7. Add the chunky stuff to the oat mixture and stir ensuring all the oat bits are coated with liquid 
  8. Scoop granola mixture into prepared pan, pressing down with a greased spoon/spatula to flatten
  9. Refrigerate for at least 2 hours, remove from pan and cut into rectangles or get creative with cookie cutters!

***if using chocolate chips, let granola mixture cool a bit before adding them in. They will melt otherwise.
